This is the biggest fish of the day and I got it. He was sleeping by a coral and caught me by surprise. I took a deep breath, dove down, and closed my eyes until I was close enough to take a shot. He woke up when I hit him in the head. I grabbed the spear and shoved it through the rest of the way. It was exhilarating. I could not wait to get to the boat and show the guys my success!
We raced from the island to the jungle where the garden was waiting. I steamed arugula, chaya, calaloo, and broccoli; simmered the conch and hog snapper in a light coconut curry with lemongrass and ginger. We even had crisp yucca sauteed with garlic and sweet plantain on the side. What could be a more fulfilling experience? Catching, cleaning and cooking your own fish to complement your farm grown food. There is enough fish in the freezer to last all week and the garden is growing bigger and better each day. We work hard to live healthy but we’re happy to do it.
