Both a background in farming and a Bachelors of Culinary Nutrition from Johnson and <st1:place u3:st="on"><st1:placename u3:st="on"><st1:place u4:st="on"><st1:placename u4:st="on"><st1:place w:st="on"><st1:placename w:st="on">Wales</st1:placename></st1:place></st1:placename> <st1:placetype u3:st="on"><st1:placetype u4:st="on"><st1:placetype w:st="on">University</st1:placetype></st1:placetype></st1:placetype></st1:place></st1:placename></st1:place> contribute to my fresh and holistic philosophy.</span><span style="font-family: Arial; font-size: 14pt"><o:p></o:p></span><span style="font-family: Arial; color: teal; font-size: 14pt">To become the best cook, you must grow what you eat. We are responsible for the fuel we feed our body and taking care of ourselves. The amount of chemicals and artificial substances in industrialized food today is actually sickening.<u1:p></u1:p></span><span style="font-family: Arial; font-size: 14pt"><o:p></o:p></span><span style="font-family: Arial; color: teal; font-size: 14pt"><u2:p></u2:p>Unfortunately, food masquerading as healthy and nutritious is often false advertising. Dietary claims do not provide essential information such as where or how or who produced our food. </span><span style="font-family: Arial; font-size: 14pt"><u1:p></u1:p><o:p></o:p></span><span style="font-family: Arial; color: teal; font-size: 14pt">Volunteers are welcome to participate in the culinary program and develop this close connection to what we eat. <em>Healthy Cuisine</em> classes include harvest, preparation, and clean-up of daily meals. The following schedule is flexible.<u1:p></u1:p></span><span style="font-family: Arial; font-size: 14pt"><o:p></o:p></span></p>

Never before has the human population enjoyed such beautiful freedoms and technological advances that have catapulted man into the ultimate comfort zone. We are free to fly anywhere in the world or perhaps the moon. Our every desire is merely at our fingertips. Food stuffs, alcohol and pharmaceuticals are readily available. Fast and cheap as ever before, we can get whatever we want delivered with the push of a button. The internet allows us to access and read any information ever even thought of. Global economics in its extreme complexity to bring it all together has created the ultimate and supreme industrial corporation where the bottom line profit is the samurai sword that cuts both ways. The Dual with dualism is winning its war. Have we forgotten the symbiotic relationship with nature that has brought us thus far?</p>
<p class="MsoNormal">The top is heavy and the support beneath stressed. The people want something to look forward to more than standards of living. Whose standards are better than your own? Let’s be realistic though. It cannot change overnight or break down because there are so many checks in place that balance the whole scheme from one end of the globe to any other. The economy’s complexity and diversification is its essence of survival. As long as there are free markets, there will be hardworking individuals to pick up the slack where others have failed in the competitive world. We have forgotten that competition is co-operation though. We must unite to compete. Competition is cooperatively building the community and not knocking the little guy out. We are only as strong as our weakest link.</p>
<p class="MsoNormal">Developing countries burdened by debt are becoming more innovative in their approach to commerce and ultimately wiser about productivity. At the end of the day feeding ones family is the bottom line. We believe what we see with out own eyes in <st1:country-region w:st="on"><st1:place w:st="on">Belize</st1:place></st1:country-region>. We know as long as there are coconuts on the tree and fish in the sea, we can feed ourselves.</p>
<p class="MsoNormal" style="text-indent: 0.5in">We see our cousins to the north getting sick. Cancer, diabetes, poor health from processed food like substances. Bombarded by advertisement and uneducated to make the right decisions about what they put into their bodies, they pay the ultimate price for cheap eating thrills. Does it even taste good. Does the strawberry milk taste like?? Or corn chips like, what??? Cheetos cheat us. It was not long ago that every country grew all its own food locally in small quantities enough to feed a family or small community cooperatively towards a common goal of health and longevity. Now we are concerned with making enough money, equity, real estate, investment portfolios so that we may retire and enjoy the latter part of life. But why not enjoy it now and have a better future, more rewarding, healthier than our parents and with a closer spiritual relationship with our food, family and ultimately with God.</p>
<p class="MsoNormal" style="text-indent: 0.5in">This alternative to the rat race is possible; A lifestyle outside the normal expectations; balance between technology and nature. Living does not have to be so complicated with wants and needs. What you truly value in your heart is all the need you will ever want. Love can bring you to this equilibrium state of mind. Do you love what you eat? Are your loved ones health important ? Food is viability. You are what you eat. Clean air, good rain water can take you a long way and great food will take you even further. This is a priority to many. Eating well is number one. Consider “your food your medicine and your medicine your food”. By preventing illness with diet and age old wisdom of plants known as ethno-botany, we can live better, healthier less guilty lives. Take a step out of the box and see it now. Our food is security for the future.</p>
<p class="MsoNormal" style="text-indent: 0.5in">At our farm we think locally about where to shop. Local domestic meat and eggs can all be gathered from local village farmers. Fruits and vegetables grow in the yard or at the doorstep with a little hard work. It may be that we never have the time to sweat the rice or harvest beans but it does grow in <st1:country-region w:st="on"><st1:place w:st="on">Belize</st1:place></st1:country-region>. A wide variety of real whole food can be grown, raised or collected in the wild. 21<sup>st</sup> century Sustainability is a learning process of trial and error. Once the roots of knowledge start in the ground, they grow into the kitchen were life is transformed to art and taste becomes culture. Opulence is the spice that flavors and sustains the well being for all mankind and all species for all times.</p>
<p class="MsoNormal" style="text-indent: 0.5in"><img src="http://belizebamboo.com/wp-content/uploads/2008/07/substance.JPG" alt="substance.JPG" /><st1:country-region w:st="on"><st1:place w:st="on">Belize</st1:place></st1:country-region> is a young nation. Growing slow and taking time to develop its land. The geographical location in the Caribbean Central American mainland with the largest Barrier reef system coastline in the Northern hemisphere naturally endows <st1:country-region w:st="on"><st1:place w:st="on">Belize</st1:place></st1:country-region>. The people are colorful, creative, and distinctly Belizean. We are a proud neighbor of <st1:country-region w:st="on"><st1:place w:st="on">Mexico</st1:place></st1:country-region> who supplies the majority with electricity and on special occasions Belizeans may enjoy Mexican beers at the carnivals during independence. We share a newly found history of co-operation together. Spanish and English as well as the local vernacular Creole are spoken by most who reside in <st1:country-region w:st="on"><st1:place w:st="on">Belize</st1:place></st1:country-region>.</p>
<p class="MsoNormal" style="text-indent: 0.5in">Bamboo is the focus of sustainable agriculture at our farm in the forest reserve. We hope to some day construct housing and furniture and produce edible shoots for the free markets in <st1:country-region w:st="on"><st1:place w:st="on">Belize</st1:place></st1:country-region> and others close by. Many other cultivars; fruits, vegetables, medicinal plants, and native oil palms add to the plantations vigor and strength in diversification. Find what’s really at the end of the rainbow. <p class="MsoNormal"><strong><span style="font-size: 14pt">We finished our first training camp on Friday.<span>  </span>Wow!!<span>  </span>What a journey!<span>  </span>Long hours on the bus and (mysterious) missed calls by the hometown referees.<span>  </span>Typically, this is routine on a Central American football excursion.<o:p></o:p></span></strong></p>
<p class="MsoNormal"><strong><span style="font-size: 14pt"><o:p> </o:p></span></strong></p>
<p class="MsoNormal"><strong><span style="font-size: 14pt">We traveled with 21 players.<span>  </span>Our first game was on Tuesday against Real <st1:place w:st="on">Cancun</st1:place>, a top 2<sup>nd</sup> Division team.<span>  </span>We were originally set to play Atlante, but as we arrived, we were told of the change.<span>  </span>It was still a good game and a good opportunity for me to see our players.<span>  </span><o:p></o:p></span></strong></p>
<p class="MsoNormal"><strong><span style="font-size: 14pt">We tied 3-3 and dominated most of the game.<span>  </span>I was able to play everyone and we played in several different systems.<span>  </span>The Mexican media was ever present, so I always had this in the back of my mind.<span>  </span><o:p></o:p></span></strong></p>
<p class="MsoNormal"><strong><span style="font-size: 14pt"><o:p> </o:p></span></strong></p>
<p class="MsoNormal"><strong><span style="font-size: 14pt">Our 2<sup>nd</sup> game was on Thursday against a Selection from Chetumal.<span>  </span>We started the players I was least familiar with.<span>   </span>We wanted to win, but more importantly we had to make some decisions about which players should continue with us.<span>  </span>We quickly went down 2-0 and the game proved to be too fast for several of our players.<span>  </span>We were forced to make many changes and as a result, the momentum changed quickly.<span>  </span>We took complete control of the game and started creating chances immediately.<span>  </span>Unfortunately, we could not find the back of the net.<span>  </span>It was very difficult to watch us miss so many opportunities.<span>  </span>It hurt my eyes!! We lost 2-0.<span>  </span>A good lesson for us.<o:p></o:p></span></strong></p>

<p class="MsoNormal"><span style="font-size: 14pt">We had a great training camp last week!<span>  </span>The work was intense and demanding.<span>  </span>The current schedule is 3 trainings per day, starting at 6:00am.<span>  </span><o:p></o:p></span></p>
<p class="MsoNormal"><span style="font-size: 14pt">As each day passes I feel the time shorten.<span>  </span>There is so much to teach and so little time.<span>   </span>The group is motivated and I have been impressed by their discipline, thus far.<span>  </span>Belize National Teams (of the past), lacked cohesiveness, but this group is different and it is starting to feel like a family.<span>  </span>The players’ lack of experience is still my biggest challenge.<span>  </span>We are preparing to play against some of the top professionals in the world, but many of our players have spent their whole career in an amateur environment.<span>  </span>A difficult puzzle to solve. This is a daily learning experience for us all (similar to life).<o:p></o:p></span></p>
<p class="MsoNormal"><span style="font-size: 14pt"><span> </span><o:p></o:p></span></p>
<p class="MsoNormal"><span style="font-size: 14pt">We have a great test this week.<span>  </span>We play Aurelia (a 1<sup>st </sup>Division team from <st1:country-region w:st="on"><st1:place w:st="on">Guatemala</st1:place></st1:country-region>) on Wednesday and on Thursday we play the Honduras National Team.<span>  </span>Their full squad will be there and we play in <st1:city w:st="on"><st1:place w:st="on">San Pedro Sula</st1:place></st1:city> at the National Stadium.<span>  </span><st1:country-region w:st="on"><st1:place w:st="on">Honduras</st1:place></st1:country-region> will have free admission, to help promote the team.<span>  </span>The game will be at 7:00pm and it may be televised on some Spanish stations.<o:p></o:p></span></p>

<p class="MsoNormal"><span style="font-size: 14pt">Also:<span>  </span>I visited <st1:place w:st="on">Arran</st1:place> and Alison Beavis over the weekend.<span>  </span>They are the owners of <a href="http://www.metbelize.com/">www.metbelize.com</a> and I lived at their place during my last stay in <st1:country-region w:st="on"><st1:place w:st="on">Belize</st1:place></st1:country-region>.<span>  </span>They are part of my <st1:country-region w:st="on"><st1:place w:st="on">Belize</st1:place></st1:country-region> family and I am happy to report that Alison had her 1<sup>st</sup> baby on Sunday morning (12:15am).<span>  </span>A beautiful, healthy girl named Sierra Marie Beavis.<span>  </span>It was a wonderful experience!<o:p></o:p></span></p>

<p class="MsoNormal">Our first game was last Wednesday against Heredia in <st1:country-region w:st="on"><st1:place w:st="on">Guatemala</st1:place></st1:country-region>.<span>  </span></p>
<p class="MsoNormal">They are a 1<sup>st</sup> division team from the Peten region.<span>  </span>We played in a beautiful stadium, which overlooks the lake near <st1:place w:st="on">Flores</st1:place>.<span>  </span>It was a good experience and a chance for us to give our B-team 90 minutes.<span>  </span>We scored 1<sup>st</sup> and our defense looked strong, until our keeper misjudged a simple cross.<span>  </span>1-1.<span>  </span>We had a good laugh after the goal, because the linesman ran down the sideline celebrating the goal.<span>  </span>He was skipping and smiling.<span>  </span>It was hilarious.<span>  </span>The referees’ were comical.<span>  </span>It was just too obvious.<span>   </span>They are probably still celebrating the ending.<span>  </span>A long pass to their forward, who jumps to head the ball (with no one near him) and deflects it out for a goal-kick.<span>  </span>The (jolly) linesman sprints to the end-line and points to the corner.<span>  </span>Everyone is in shock for a moment.<span>  </span>They send in a cross from the corner and our defender scores an own-goal.<span>  </span>Ouch!<span>  </span>We lost 2-1.<span>  </span>We played well and gave them 2 goals.<span>  </span>Concentration is the key!</p>
<p class="MsoNormal">We spent the night in <st1:country-region w:st="on">Guatemala</st1:country-region> and woke at 4:00am to drive to <st1:place w:st="on"><st1:city w:st="on">San   Pedro Sula</st1:city>, <st1:country-region w:st="on">Honduras</st1:country-region></st1:place>.<span>  </span>We played the Honduras “A” National team at 7:00pm on Thursday night.<span>  </span>This was the full <st1:country-region w:st="on"><st1:place w:st="on">Honduras</st1:place></st1:country-region> team, not a ‘B’ team or youth team.<span>  </span>They had all their best players on the field, minus Suazo (from Inter Milan).<span>  </span>We started very nervous and made several basic mistakes, including a foul in the box during the 3<sup>rd</sup> minute (1-0 from a penalty).<span>   </span>We started to play and soon created a few chances of our own.<span>  </span>Towards the end of the 1<sup>st</sup> half we hit the post with a header from the back post…the keeper and defense were no where to be seen.<span>  </span>They scored their 2<sup>nd</sup> goal soon after from a corner kick.<span>   </span>The players did not line-up as we had practiced (unacceptable) and they paid the price.<span>  </span>We came out with confidence in the 2<sup>nd</sup> half and we hit the post again on a free kick.<span>  </span>Most of the game was in the midfield and we created more chances.<span>  </span>The game ended 2-0.<span>  </span>We played really well and the <st1:country-region w:st="on"><st1:place w:st="on">Honduras</st1:place></st1:country-region> coach (Rueda) was very positive (to the media) about our performance.<span>  </span>We spoke after the game and shared some ideas.<span>  </span>We gained some respect with this performance.</p>

<p class="MsoNormal"><span style="font-size: 16pt"><o:p> </o:p></span></p>
<p class="MsoNormal"><span style="font-size: 16pt">Last week was another un-belize-able adventure.<span>  </span>We were forced to cancel the 1<sup>st</sup> day of training camp because of the heavy rains.<span>  </span>There were floods, bridges washed away and players isolated in their town.<span>  </span>Ultimately, we had to fly about 10 players to <st1:city w:st="on"><st1:place w:st="on">Belize City</st1:place></st1:city>, so they could catch a bus to the training camp.<span>  </span>At the training camp, we faced several days of random blackouts.<span>  </span>One of the top defenders in the country works for the main electric company.<span>  </span>They refuse to release him for training camp and he has only been present at 2 training sessions.<span>  </span>Everyone would like to have him on the team, but he has not been with the group enough.<span>  </span>We may still bring him to <st1:city w:st="on">Houston</st1:city> in the player pool, but we were really hoping to have him with us here in <st1:country-region w:st="on"><st1:place w:st="on">Costa Rica</st1:place></st1:country-region>.<span>  </span>We’ll see. <o:p></o:p></span></p>
<p class="MsoNormal"><st1:place w:st="on"><st1:city w:st="on"><span style="font-size: 16pt">Ahhh</span></st1:city><span style="font-size: 16pt">, <st1:country-region w:st="on">Costa Rica</st1:country-region></span></st1:place><span style="font-size: 16pt">!<span>  </span>What a beautiful country!<span>  </span>I believe I’ve seen every shade of green on the planet.<o:p></o:p></span></p>
<p class="MsoNormal"><span style="font-size: 16pt">The press has been giving us more attention here (if you want to read a few articles spell <st1:country-region w:st="on"><st1:place w:st="on">Belize</st1:place></st1:country-region> in Spanish…Belice).<o:p></o:p></span></p>
<p class="MsoNormal"><span style="font-size: 16pt">We will be playing the Costa Rica National Team on the Dole Pineapple farm (an amazing piece of property).<span>  </span>There will not be any media present (as far as I know).<span>  </span>We will play 4-30 minute periods.<span>  </span>A great test for us!<o:p></o:p></span></p>

			<content:encoded><![CDATA[<p>Today was a work day like any other. At the crack of dawn you can hear the howlers speaking one last time before they move along with their day, foraging the canopy. The parrots have so much to squak about. The roosters can be heard too, cockle doodle do. We stay in bed a little later knowing that our animals are self sufficiently finding food at least until 7 am when they guys arrive to work. we employ 4 full time guys and a couple part timers from our village. Today we finished the rain catch gutter that feeds a 660 gallon tank. It holds our precious drinking water. The dry season is on and every drop counts now until the rains come back for hurricane season. Speaking of hurricane season, we haven&#8217;t got a bad one since 61&#8242;. Though, there have been a few since then. By mid day it is a break for lunch and we run the pumps to irrigate the garden while its hot.  I am dreaming of having a wind mill or hydraulic Ram so that we aren&#8217;t so dependent on Petroleum fuels. Soon, the farm will have a Truck converted to use bio-diesel. We are working on our compost, manure inputs to mix and apply later onto our 5000+ plants. Almost done building the next structure too. This one has a palm thatch roof and a loft inside for an  elevated bed up in the breeze. Its soo cool&#8230;</p>
<p>Does anyone want to build a windmill?? or a ram pump from a check valve and old pipe fittings???Are there any bright people that can help build a sustainable future? If so, we have a pretty good start here. E-mail us at belizebamboo@gmail.com</p>

<p>Today we loaded 2 tons of sheep manure onto the trailer and hauled it down the road. We managed to apply some to the garden before the rain came down. One last rain for this season as the dry sets in. Our sustainable eco-agro culinary farm is producing fresh produce rite onto the table where my wife, the chef, cooks it up to perfection. Adena&#8217;s culinary creations are more than subsistence livining satisfaction, they are magical meals prepared creativly and with lots of love. Ok, so I am a bit bias to the opinion that my wife is a good cook but she did win the deans award at her culinary university.</p>
<p>On a lighter note, the horses are doing well with plenty of Bermuda grass still green enough to eat. Is anyone ready to ride? What better way of sustainable travel can you think of? i just heard the chickens chirping, they are getting big and fat and almost ready to harvest. They are 100 percent home grown, free range and bug eating machines. That is good for the garden, chickens not bugs, in case you didn&#8217;t know.</p>
<p>The bamboo is getting huge and almost ready for a sustainable agro-forestry harvest here in our tropical eco-system teaming with biodiversity and wildlife. Ok, so now i am just using key words for google to put us at the top of their list. Come visit so we can get off the damn list. I&#8217;m sick of feeling like a liver recipient patient. Eat healthy, visit our farm and spread the word. Belizebamboo baby!!</p>
